Lentil and Spinach Soup

Ingredients:
- 1 cup dried lentils
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
- Olive oil for cooking
Instructions:
1. In a large pot, heat some olive oil over medium heat.
2. Add the chopped onion, garlic, carrot, and celery. Cook until the vegetables are soft.
3. Rinse the lentils and add them to the pot.
4. Pour in the vegetable broth and add the cumin, paprika, salt, and pepper.
5. Bring the soup to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the lentils are tender.
6. Stir in the chopped spinach and cook for an additional 5 minutes.
7. Adjust the seasoning if needed.
8. Serve the lentil and spinach soup hot, garnished with some fresh herbs if desired.
